Why is there only one seating? 

Many reasons. One, Creole food is soul food and even though we create and make ours through a fine dining lens, what keeps the “soul” is the love and passion put into making it and how it’s shared, and we want everyone that comes to feel like they’re eating with family and friends as soul food should be, without it necessarily being a “family style” meal. Two, we want all of our guests to feel relaxed, at home, and not rushed, and with one seating there’s never a need to push anyone out to make room for the next reservation. Finally, it helps keep stress down and a healthy environment for the kitchen and staff to be able to focus on the course at hand and put out the best quality dishes and experience. We believe that you can always somehow taste the difference between food made by people who love what they do and food made by overwhelmed and overworked cooks.

Why are there no vegetarian or vegan options and substitutions? 

We cook for our ancestors, our history, and our heritage, not just to make food, to just make money, or to please everyone’s specific preferences (which is impossible to do for everyone). We exist to tell the story of New Orleans through food and provide a taste of New Orleans to the diners of Amsterdam through authenticity and specific flavors, ingredients, and dishes. When creating our menu, all of these elements, and the history and stories that go with them, are important, and replacing specific elements may still create a delicious and edible dish that fits a dietary preference, but it takes away from and erases what the dish is intended to be, the story it tells, and the taste it should have, and at that point you could just eat anywhere else where their goal is only to serve good food. If something on the current menu doesn’t fit your needs or preferences, please check back when the season and menu changes and we hope to be able to welcome you then.
